Hungry Girl: EZ Cheesy Lasagna Recipe

Hungry Girls LasagnaLisa Lillien spoke about Hungry Girl’s EZ Cheesy Lasagna Recipe (also called the Pasta Expander)

  • 2 (1/4-in thick) eggplant slices (cut lengthwise from a long eggplant), patted dry
  • 1 egg whites (or 2 Tbsp liquid egg whites)
  • 2 Cups: light or low-fat ricotta cheese
  • 1 Tbsp basil (chopped)
  • 1/2 tsp garlic (chopped)
  • 1/4 tsp salt (add a pinch more for taste)
  • ground nutmeg
  • 1 Cup: mushrooms (chopped)
  • 1 Cup: canned crushed tomatoes
  • 1/2 Tbsp Italian seasoning
  • 2 sheets oven-ready lasagna noodles
  • 1/4 Cup: part-skim mozzarella cheese (shredded)
  • 1 Tbsp reduced-fat Parmesan-style grated topping
  • black pepper (optional)

Directions

  • Preheat oven to 425° F
  • Spray a baking sheet with nonstick spray
  • Lay eggplant slices on the baking sheet and spray with nonstick spray
  • Bake for 10 minutes
  • Flip eggplant and bake for about 10 more minutes.
  • in a medium bowl, thoroughly mix egg whites, ricotta cheese, basil, garlic, salt, and nutmeg.
  • bring a skillet sprayed with nonstick spray to medium-high heat.
  • cook and stir mushrooms until softened (4 minutes.)
  • stir mushrooms into ricotta mixture.
  • spray a 9-inch by 5-inch loaf pan with nonstick spray.
  • mix crushed tomatoes with Italian seasoning in a medium bowl.
  • evenly layer ingredients in the loaf pan:
    • 1/4 cup seasoned tomatoes
    • 1 lasagna sheet
    • half of the mushroom-ricotta mixture
    • 1/4 cup seasoned tomatoes
    • 1 eggplant slice
    • repeat layering with remaining ingredients.
  • sprinkle with mozzarella cheese and grated topping. -
  • bake until cheese is lightly browned (about 20 to 25 minutes)

Hungry Girls Mac and CheeseAnother of Lisa Lillien’s Pasta Expanders is the Hungry Girl’s Mega Mac & Cheese Recipe. -

  • 3 Cups: frozen cauliflower florets
  • 4 1/2 oz (about 1 1/4 cups) uncooked high-fiber elbow macaroni
  • 2 Tbsp light sour cream
  • 2 slices low-fat American cheese
  • 4 wedges of The Laughing Cow Light Creamy Swiss Cheese
  • Optional seasonings: salt and black pepper

Directions

  • place cauliflower in a large microwave-safe bowl (cover and microwave for 3 minutes) uncover and stir.
  • re-cover and microwave for 2 to 3 minutes.
  • drain excess liquid.
  • chop cauliflower, return to the bowl, and cover to keep warm.
  • prepare pasta per package instructions ( about 7 minutes) in a medium/large bowl.
  • drain pasta and stir into cauliflower.
  • cover to keep warm.
  • mix sour cream, cheese slices, and cheese wedges, breaking slices and wedges into pieces in a medium microwave-safe bowl.
  • microwave for 20 seconds and then stir well.
  • microwave for another 20 seconds (or until cheeses have melted.)
  • stir well.
  • add cheese mixture to the large bowl and thoroughly stir.

  • 1 (18.25 oz) box moist-style dark chocolate cake mix
  • 1 (12 oz) can club soda

Directions

  • preheat oven to 350° F.
  • spray a 9-inch by 13-inch baking pan with nonstick spray
  • whisk cake mix with soda until smooth in a large bowl.
  • pour into the pan.
  • bake until a knife inserted into the center comes out clean (30 to 35 minutes).

  • medium Fuji apple (cored and cut into 1/2-inch cubes)
  • 12 to 15 pieces Red Hots cinnamon-flavored candy
  • 1/2 sheet (2 crackers) low-fat cinnamon graham crackers (crushed)
  • dash cinnamon

Directions

  • place apple cubes in a microwave-safe cup or mug.
  • top with Red Hots (the more, the hotter! …and more calories)
  • cover and microwave for 2 minutes.
  • stir well.
  • re-cover and microwave for 1 to 2 minutes.
  • mix well. -let cool, at least 10 minutes.
  • top with crushed graham crackers and cinnamon.

  • 1 frozen meatless hamburger-style patty (100 calories or less) I Love Boca Burger – they taste as good or better than hamburgers.
  • 1 light whole grain or whole wheat hamburger bun
  • 1 slice tomato
  • 1 slice onion
  • 1/2 lettuce leaf
  • 3 hamburger dill pickle chips
  • 1 teaspoon light mayonnaise
  • 1 teaspoon ketchup

Directions -

  • bring a skillet sprayed with nonstick spray to medium heat.
  • cook patty on each side (4 minutes per side).
  • split bun into halves and place patty on the bottom half.
  • top with tomato onion lettuce pickle slices
  • spread the top half of the bun with mayo and ketchup, and place it on top of the stack

Hungry Girl Pan Fried Chicken Parmesan Recipe

Step 1

  • place Fiber One breakfast cereal instead of bread crumbs into a blender
  • blend cereal until it turns to a powder
  • season up cereal with
    • Salt
    • Onion powder
    • Oregano
    • (choose whatever seasonings you like)

Step 2

  • beat ½ Cup: of liquid eggs substitute in separate bowl
  • dip chicken into the egg mixture
  • coat egg on both sides
  • coat the chicken with Fiber One mixture on both sides

Step 3

  • place chicken in hot skillet
  • cook for 4 minutes on each side (should be nice and brown and crispy and no pink in the center if you cut chicken in middle to check)

Step 4

  • spread 2 Tbsp of sauce over each cutlet while chicken is still in the skillet. (look for low-fat sauce)
  • sprinkle ¼ Cup: cheddar cheese onto the chicken while still in the pan
  • cover the chicken to allow the cheese to melt

Traditional Chicken Parmesan: 1090 calories
Hungry Girl Chicken Parmesan: 258 calories per serving
